That hissing is called stridulation. T's stridulate by rubbing modified bristles that are either between the chelicerae and pedipalps or between the pedipalps and first pair of legs, depending on the species. It's kind of similar to velcro I guess you could say. Not all T's stridulate but many species, old world and new world will do so when threatened.

Does anyone know if A. Geniculata has been known to hiss? I had to remove my 6" male from his enclosure tonight to do some tank maintenance and I could swear I heard him hissing as he was walking up my arm. If he was indeed hissing, what does this mean? He's always been kind of calm so I don't think he felt threatened in any way. :?
