I've never encountered this, does it grow inbetween molts or just when they molt?

Internally, the tissues may be regenerating in preparation for the molt, but you can't see any changes until the spider actually actually does molt. It's pretty cool. One day, your spider has 7 legs, and after the molt, there's leg number 8, or at least part of it. Makes you wonder where it came from!
