As substrate i use a 70:30 mix of peat and vermiculite. I tend to keep it slightly damp, just enough to hold it together, but not wet, as it will encourage mold and mites. To keep the humidity up, leave a reasonable sized water bowl in the tank with water in it at all times. i've never measured the humidity, but using this method has always worked fine.
I use 100% coconut fiber such as Bed O Beast. I overfill the water dish from time to time. Moisture also depends on desert or rain forest species. What ever substraight you use.......take the dead crickets out a few times a week....it will save you problems .......
